Healthy Mint Choc-Chip Ice Cream | Did someone say Avocado?

Then you’ll love this healthy Mint Choc-Chip Ice Cream recipe.

It’s free from refined sugar and manages to mask an entire avocado among the goodness of coconut milk, maple syrup, peppermint and dark chocolate. We call it genius. Your tiny humans would go with sneaky!

All you need to whip up a healthy alternative to the sugary store-bought ice creams is a high-speed food processor and 5 minutes of your time. Oh, and deciding whether you use our best-selling Frosties, Tubies or Poddies to turn this recipe into a crowd-pleasing winner.

Makes 6 | Prep 5 minutes

Ingredients

  • 375 ml (1 ½ cups) tinned coconut milk
  • 1 large avocado
  • 95 ml (⅓ cup and 1 tbsp) maple syrup
  • 6 drops food grade peppermint essential oil
  • 25 g (¼ cup) dark chocolate, grated

Method

Place the coconut milk, avocado, syrup and peppermint oil in a high-speed food processor and blitz until smooth and creamy.

Taste to check the mintiness and sweetness is right. Add more syrup/peppermint oil as desired.

Stir in the grated chocolate by hand.

Pour into Frosties and place in freezer for at least four hours.
