Ingredients
- 4 eggs, hard-boiled and halved
- 1 tbsp whole-egg mayonnaise
- 1 tbsp chives, finely chopped
- ½ tsp Dijon mustard
- half a red capsicum, cut into 'sails'
- 1 tbsp buckwheat kernels or sesame seeds, optional
Method
Scoop egg yolks into a bowl and mash lightly with a fork.
Add mayonnaise, chives, and mustard, and stir to combine.
Spoon 1 heaped teaspoon of yolk mixture into each egg half.
Insert a 'sail' into each boat and sprinkle with buckwheat kernels.
