Bacon and Mushroom Gnocchi | The Easy Gnocchi Sauce Recipe for Kids

If we had to pick our favourite pasta for takeaway night, it would have to be fly-under-the-radar gnocchi. These tiny bundles of Italian goodness simply make us (and especially our young ones) smile from ear to ear.

So it shouldn’t come as a surprise that the Team WMBT is always on the lookout for new easy gnocchi sauce recipes that can infuse a fakeaway feeling into any regular dinnertime.

And this one is up there with the best!

To be fair, we love to keep it low-key with store-bought gnocchi rather than making them from scratch. That’s only fair when you’ve been parenting all day, right? Thankfully there are plenty of fresh gnocchi options on supermarket shelves that feel almost like the real fresh deal.

Our tiny WMBT crew love their gnocchi dished up in their favourite Snackie. And whether you opt for Bear, Cat or Bunny, you’re always met with the signature character features once you’ve gobbled up your dinner. It’s the highlight of every meal!

And when dinner’s done and dusted, leave the cleanup to your dishwasher, who will take the Snackie for a decent spin before presenting it to you basically brand-spanking new.

Makes 6 portions | Prep 15 minutes | Cook 20 minutes

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 1 clove garlic, finely diced
  • 1 red capsicum, finely diced
  • half a zucchini, finely diced
  • 2 field mushrooms, chopped into sliced
  • 6 rashers bacon, finely diced
  • 400 g can crushed tomatoes
  • 60 ml (¼ cup) crème fraiche
  • handful fresh basil, roughly chopped
  • 500 g gnocchi

Method

Heat the oil in a large pan over a medium heat then add onions and sauté for 5 minutes, until soft and translucent.

Add garlic and vegetables and sauté for a  further 3 minutes.

Add bacon and sauté for 3 minutes before adding the tomatoes. Stir to combine, bring to the boil then allow to simmer gently for 5 minutes, before stirring in the crème fraiche. Allow to simmer for a further 2 minutes.

Meanwhile cook the gnocchi as per packet cooking instructions, drain, then serve in your favourite Snackie. Place a serving of the bacon and mushroom mixture on top, then sprinkle with basil.
