All you need to whip up these tasty veggie gems is a high-speed food processor, fresh ingredients and your expert eye to roll them up into something that resembles sausage rolls.

Makes 25 I  Prep 50 minutes

Ingredients

  • 150 g (1 ½ cup) rolled oats
  • 125 g (1 cup) walnuts half an onion, peeled
  • 2 eggs
  • 100 g (⅔ cup) feta cheese
  • 1 tbsp  tamari
  • handful fresh garden herbs (chives, parsley, marjoram, thyme)
  • 150 g (1 ¼ cup) pumpkin, peeled, cut into chunks, and steamed
  • 3 sheets all butter puff pastry
  • 1 egg wash
  • black sesame seeds, optional

Method

Pre-heat oven to 200°C and line a baking tray with parchment  paper.

Place onion and herbs into a high-speed food processor and blitz for a few seconds.

Add walnuts and oats, and blitz for another few seconds.

Add eggs, feta, tamari, and pumpkin, and mix to combine.

Cut just thawed puff pastry in half on a work bench then place th of the mixture onto the long edge of the pastry and roll.

Cut into four equal portions and place on baking tray. Score with a knife, brush with egg wash, and sprinkle with sesame seeds.

Bake for 20 minutes until crisp and golden.
