Trust us when we say this one is a winner.
Here at WMBT HQ, Kids Poke Bowls have become one of the few things our little ones keep asking for.
Is it the mix-n-match nature?
Is it the ingredients?
Is it the name?
Or is it the fact we’re dishing them up in our Stickie Bowls?
We’re not quite sure. But we love it!
These mighty bowls mean dinner is quick and easy, and we can sleep tight knowing our munchkins got all the nutrients they need for the day. Bring it on, we say.
Simply combine the ingredients, top it with the sauce and watch everyone gobble it up in no time. And once the feast is wrapped up, it’s time to move on to your favourite movie and put your dishwasher in charge.
We love the combo in this recipe, but you can totally come up with your winning ingredients once you’ve got feedback from your people, young and old.
It’s a great way to kick off the weekend with a healthy alternative to the greasy takeaway options.
It really is fakeaway at its best.
Makes 4 bowls | Prep 20 minutes | Cook 25 minutes
- 1 fillet salmon
- 200 g (1 cup) rice
- 1 disc fresh pineapple, cut into small pieces
- half a carrot, grated
- 8 cherry tomatoes, halved
- half an avocado, thinly sliced
- 1 raddish, thinly sliced
- handful baby spinach
- 125 ml (½ cup) Greek-style natural yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- ¼ tsp salt
- ¼ tsp minced garlic
- ½ tsp fresh dill, finely chopped
Preheat oven to 180 C and line a baking tray with parchment paper.
Place salmon fillet on prepared baking tray and bake for 20 minutes or until cooked through.
Meanwhile cook rice in a saucepan as per package instructions and make the sauce by combining all sauce ingredients in a bowl.
Remove salmon from oven, allow to cool slightly before cutting into large chunks.
When rice is cooked, divide equally between two Stickie bowls. Add salmon chunks and all remaining ingredients then drizzle with a small amount of sauce.
