Ingredients

  • 100 g (1 ¼ cup) oats
  • 80 g (1 cup) desiccated coconut
  • 150 g (1 cup) pitted dates, soaked for 10 minutes and drained
  • 2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 40 g (¼ cup) coconut oil
  • 1.5 tbsp water

Method

Place all ingredients into a high-speed food processor and blitz until well combined.

Roll into balls and coat in additional coconut.

Store in an airtight container in the fridge for up to four weeks.
