This recipe packs quite a nutritional punch with dates, heart-healthy oats, and refreshing raspberries.
With a good balance of fats, carbs, and healthy sugars, this snack is a mum-approved choice for growing munchkins.
Medjool dates in particular are large, plump, and have a soft texture that helps the whole mixture stick together. Dates are rich in iron, potassium, & calcium, and blessed with a natural sweetness tiny tummies won’t be able to resist.
Raspberry And Coconut Amazeballs
Makes 10 Balls | Prep 10 minutes | Fridge 2 Hours
- 100 g (1 ¼ cup) rolled oats, finely ground
- 70 g (½ cup) raspberries, fresh or frozen
- 2 tsp vanilla bean paste
- 40 g (¼ cup) coconut oil
- 35 g (½ cup) desiccated coconut
3 Medjool dates, pitted
Place ingredients into a food processor and blitz until combined.
Form one tablespoon portions into balls and roll in desiccated coconut or press firmly into Mini Poddies.
Place in the fridge for at least two hours before serving in your favourite Snackie.
Store in an airtight container for up to seven days or freeze for up to three months.
