There’s no Better Winter Warmer than a Hearty Beef Goulash – Especially when it’s Baby-Friendly
Cold winter days are the perfect time to experiment with stews and casseroles.
And one of our all-time favourites must be the trusty Beef Goulash.
In this baby-friendly adaptation, we’re sticking with the proven staple ingredients like carrots and potatoes, but we’ve loaded it up with the extra superpowers of pumpkin and sweet potato.
It boosts this baby-friendly beef recipe with an extra dose of vitamins and gives it a rich texture that melts on your tongue.
All up this Beef Goulash takes just under 3 hours, but it’s worth every minute.
Our efficiency tip:
Cook a bigger batch and freeze what’s leftover for later. It’s a clever way to maximise the time and effort that goes into a hearty slow-cooked meal like this.
The best way to serve this glorious winter warmer?
That’s entirely up to you and your munchkin. We love pasta, rice or steamed greens served on the side on our fun We Might Be Sticky Plates. They come with 3 clever sections that will turn this meal into an instant 3-course delight.
Makes 6 Stickie Plates (plus leftovers)
- 2 carrots, peeled and cut into cm cubes half a pumpkin, cut into 1 cm cubes onion, finely diced
- 1 clove garlic, finely diced
- 4 medium sized potatoes, peeled and cut into 1 cm cubes
- one half a large sweet potato, peeled and cut into 1 cm cubes
- 500 g diced beef
- 500 ml (2 cups) beef or vegetable stock olive oil
In a stove top pressure cooker or a large saucepan, heat oil over a medium heat and saute onions for 3-5 minutes until soft and translucent.
Add garlic and remaining vegetables and saute for another 3 minutes.
Add beef and stir until beginning to brown.
Add stock and, if using stove top pressure cook, pressure cook for 25-30 minutes. If using an electric pressure cooker, transfer from the saucepan to electric pressure cooker and cook as above.
Alternatively, transfer to a casserole dish and bake in the oven with the lid on for approximately 2 hours at 150 C.
Serve with rice, pasta, and steamed greens in your favourite Stickie Plate.
