Thereā€™s no Better Winter Warmer than a Hearty Beef Goulash ā€“ Especially when itā€™s Baby-Friendly

Cold winter days are the perfect time to experiment with stews and casseroles.

And one of our all-time favourites must be the trusty Beef Goulash.

In this baby-friendly adaptation, weā€™re sticking with the proven staple ingredients like carrots and potatoes, but weā€™ve loaded it up with the extra superpowers of pumpkin and sweet potato.

It boosts this baby-friendly beef recipe with an extra dose of vitamins and gives it a rich texture that melts on your tongue.

All up this Beef Goulash takes just under 3 hours, but itā€™s worth every minute.

MakesĀ 6Ā StickieĀ PlatesĀ (plusĀ leftovers)

Ingredients

  • 2 carrots, peeled and cut into cm cubes half a pumpkin, cut into 1 cm cubes onion, finely diced
  • 1 clove garlic, finely diced
  • 4 medium sized potatoes, peeled and cut into 1 cm cubes
  • one half a large sweet potato, peeled and cut into 1 cm cubes
  • 500 g diced beef
  • 500 ml (2 cups) beef or vegetable stock olive oil

Method

In a stove top pressure cooker or a large saucepan, heat oil over a medium heat and saute onions for 3-5 minutes until soft and translucent.

Add garlic and remaining vegetables and saute for another 3 minutes.

Add beef and stir until beginning to brown.

Add stock and, if using stove top pressure cook, pressure cook for 25-30 minutes. If using an electric pressure cooker, transfer from the saucepan to electric pressure cooker and cook as above.

Alternatively, transfer to a casserole dish and bake in the oven with the lid on for approximately 2 hours at 150 C.

Serve with rice, pasta, and steamed greens in your favourite Stickie Plate.
