Blueberry Muffins Recipe

Makes 15 Muffins |Ā Prep 30 minutes


165 g (1 Ā½ cups) light spelt flour

65 g (Ā¾ cup) rolled oats

1 tbsp baking powder

Ā¼ tsp cinnamon

125 ml (Ā½Ā cup) maple syrup

185 ml (Ā¾ cup) milk

80 ml (ā…“ cup) extra virgin olive oil

2 eggs, whisked

2 tsp vanilla extract

125 g (1 cup) blueberries, fresh or frozen

  2. Place all dry ingredients in a large mixing bowl and whisk to combine.
  3. Place all wet ingredients in a medium mixing bowl and whisk to combine.
  4. Pour wet ingredients into dry ingredients and stir with a spoon until well incorporated and the batter is smooth.
  5. Fold in blueberries.
  6. Evenly spoon the batter into muffin cups and place it into the basket of the air fryer. Bake in 2-3 batches to allow enough space. Bake at 175Ā° C for 10-12 minutes or until muffins are golden and a skewer comes out clean when inserted into the middle.
  7. Allow to cool slightly before serving.
