We all know that most store-bought alternatives are laden with sugar and who knows what else. That’s why over at the WMBT HQ, we prefer to serve our little ones healthy snacks that we’ve tried, road-tested and perfected ourselves.

Making homemade ice cream with your family can be a fun and nostalgic activity that creates fond memories you’ll all remember for years to come. Now, if you’re pressed for time or find the idea of anything homemade intimidating, there’s no need to fret! It's quite simple with the right recipe. 

This Easy-Peasy Pistachio Ice Cream recipe lives up to its name because it’s beginner-friendly and requires only a few ingredients – four to be exact! You don’t even need any special tools to get the dreamy texture associated with this popular dessert. 

Because it doesn’t take much to get this pistachio ice cream prepped and ready, your kids will have fun getting in on the action. Simply gather all the ingredients beforehand and let their inner chef shine!

Another beautiful thing about this recipe is how it can be adjusted to meet dietary restrictions, in case your family has any. Here are awesome alternatives you can try to make this pistachio ice cream recipe work for you:

Dairy-free alternative: Substitute whipping cream and whole milk with non-dairy alternatives such as coconut, almond, or oat milk. This will create a lighter, less creamy texture, but it will still be delicious.

Vegan alternative: To make this recipe vegan, you can use non-dairy alternatives like those above. The sweetener in this recipe is already vegan-friendly, but you can also use maple syrup or agave nectar.

Nut-free alternative: Is nut allergy a problem? You can substitute the pistachios with toasted pumpkin seeds, sunflower seeds, or shredded coconut to add a similar nutty flavour and texture to the ice cream.

Gluten-free alternative: This recipe is already gluten-free, but if you want to add some more crunch to the ice cream, you can use gluten-free cookies or crackers instead of pistachios for the add-ins.

Pistachio Ice Cream Recipe 

Makes 1 Loaf Pan | Prep 10 minutes | Freeze 6 hours

Ingredients

  • 150 g (1 cup) pistachios, lightly toasted 
  • 50 g (½ cup) monk fruit sweetener/organic sugar, powdered
  • 100 ml (½ cup) milk
  • 250 ml (1 cup) whipping cream, whisked

Method

Add pistachios and powdered sugar to a high-speed food mixer and blitz until you have a fine flour-like consistency. 

Add milk and continue to mix until well combined and silky smooth. Scrape down the sides of the food mixer and repeat if necessary. 

In a separate bowl, use an electric whisk to mix the whipping cream.

Add the pistachio cream to the whipping cream and gently fold in by hand using a spatula until well incorporated. 

Transfer to an airtight container and freeze for at least 6 hours.

Before serving, cut the ice cream into large cubes and place cubes into the high-speed food processor. 

Blitz for a few seconds to soften and give the mixture an ice-cream consistency. 

Serve in your favourite Snackie and enjoy.

  • Cardamom and Pistachio: Add one teaspoon of ground cardamom to the milk to add a warm, spicy flavour that complements the nuttiness of the pistachios.
  • Salted Caramel and Pistachio: Swirl in ½ cup of homemade or store-bought salted caramel sauce to the ice cream as you fold in the whipping cream. 
  • Rose and Pistachio: How about a unique floral and exotic flavour? Add one teaspoon of rosewater to the pistachio mixture before freezing. 
  • Coffee and Pistachio: Does mum or dad need a jump starter? Combine two teaspoons of instant coffee granules with your milk for a nice caffeine boost.

Add-Ins / Toppings:

  • Chopped dark chocolate or chocolate chips
  • Dried fruit such as cherries or raisins
  • Crushed cookies or biscotti
  • Coconut flakes
  • Crushed pistachios or other nuts
  • More whipped cream!
