Makes 1 Mini Poddies tray | Prep 15 minutes | Bake 10 - 15 minutes
Ingredients
- 100 g butter, softened
- 60 ml (1/4 cup) maple syrup
- 1 egg
- 1 tsp vanilla essence
- 1 tsp cinnamon
- 120 g (1 cup) white spelt flour
- 50 g (1/2 cup) quinoa flakes
- 90 g (1/2 cup) chocolate drops, 70% or good quality dark chocolate
- 40 g (1/3 cup) pecans, cut into small pieces
Method
Preheat oven to 180 C and line a baking tray with parchment paper.
Cream the butter and maple syrup together until well combined. Mix in egg, vanilla essence, and cinnamon. Sift the flour and baking powder and add to the butter mixture.
Add quinoa flakes, nuts, and chocolate and mix by hand.
Spoon the mixture into Mini Poddies tray, filling about two thirds full.
Bake for 10 - 15 minutes until golden and allow to cool completely before removing from tray.
