Veggie Stock Cubes - The no-salt stock recipe for babies and beyond

We all want to dish up the best of the best for our tiniest of humans.

But sometimes mainstream products make it hard because they’re filled with additives that might be flavour-boosting, but in all the wrong ways.

That’s why we have resorted to making our own vegetable stock cubes lately so we know we’re tasting all the goodness without any added nasties or salt.

And our Mini Poddies make preserving and storing all the flavours, nutrients and immunity-boosting superpowers for later super simple.

All you need to turn this delicious no-salt vegetable stock recipe into stock cubes is the freshest vegetables, a high-speed food processor, saucepan and 25 minutes of your time.

Oh, and of course a Mini Poddie.

Once you’ve whipped up your nutrient-packed stock, simply pour it into your Mini Poddie, pop on the see-through silicone lid for easy storage and pop it into your freezer.

When everything’s set, store the stock cubes in a freezer-safe container so you can grab one whenever you feel like giving your home-cooked meals a flavour boost.

What to do with the dirty Mini Poddie?

Simply pop it in your dishwasher to take care of business for you. Because you deserve a rest after this cooking extravaganza.

Makes 1 Mini Poddies tray and extra | Prep 30 minutes

Ingredients

  • 4 celery sticks, cut into chunks
  • 3 medium carrots, peeled and cut into chunks
  • 1 zucchini, cut into chunks
  • 1 onion, peeled and cut into quarters
  • 2 cloves garlic, peeled
  • 1 tomato, cut into quarters
  • 1 bunch basil, leaves only
  • 2 bay leaves
  • 1 bunch parsley, leaves only
  • 2 sprigs thyme, leaves only
  • 1 tbsp olive oil

Method

Add all ingredients except the herbs to a high speed food processor and blitz until smooth.

Add mixture to a saucepan and simmer gently on a low heat with lid on for

25 minutes, stirring frequently to avoid the bottom catching and burning and to make sure the stock mixture is cooked evenly.

Return mixture along with the herbs to food processor and blitz for at least

1 minute until completely smooth.

Transfer mixture to Mini Poddies tray and freeze. Once solid, remove from tray and store in freezer in an airtight container.

Please note, this stock does not contain salt so is gentle for little bellies. You may want to add salt to your cooking when cooking for the big ones!
