Peanut Choc Fudge - Who said a fudge can’t be sugar-free?

Where you stop in a small country town to stretch your legs and end up browsing the local lolly shop while you’re there.

Only to leave with the compulsory serve of melt-on-your-tongue fudge that’s irresistibly good, but usually ended up in a sugar-induced argument with the siblings 5 minutes down the road.

This sugar-free fudge recipe is meant to counteract just that.

Makes 1 Mini Poddies tray | Prep 10 minutes | Freeze 1 hour

Ingredients

  • 150 g (3/4 cup) peanut butter
  • 80 ml (1/3 cup) coconut oil, melted 
  • 20 g (1/4 cup) raw cacao powder
  • 55 g (1/4 cup) maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp Himalayan crystal salt

Method

Place all ingredients into a high-speed food processor and blitz until smooth.

Spoon mixture evenly into the Mini Poddies and freeze for 1 hour until firm.

Remove from Mini Poddies tray and store in refrigerator in an airtight container.
