Raspberries & Cream Popsicles
We all know and love strawberries and cream.
Well, we’re putting a spin on things with our rich raspberries and cream popsicle recipe.
It’s decadent yet healthy.
It’s sweet yet tangy,
And it’s too good to resist.
For this creation, we like to use our dishwasher-safe silicone Frosties that turn this tasty treat into our signature bear, cat and bunny (cute details and all). The flexible silicone not only makes creating these gems super easy, it also means you can let your dishwasher take care of the sticky mess for you once your tiny humans (or you) have gobbled every last drop up.
Now grab your high-speed food processor and the fresh ingredients so you can start creating. Our raspberry and cream popsicles only take 5 minutes to whizz up and 4 hours of freezing time.
Whether you’re planning for a party, a backyard BBQ or a simple afternoon delight, 6 never seem enough. So we highly recommend making them in bigger batches so you never run out and have to let the tiny humans in your life down.
And there’s that sneaky treat for yourself when the kids aren’t watching, right?
Makes 6 | Prep 5 minutes
Ingredients
- 150 g (1 ¼ cup) raspberries, frozen or fresh
- 80 ml (⅓ cup) cream
- 60 g (⅓ cup) cream cheese
- 2 tsp vanilla extract
- 250 ml (1 cup) full cream milk
- 1 ½ tbsp maple syrup
Method
Place 1 cup of raspberries and all remaining ingredients into a high-speed food processor and blitz until smooth. Set mixture aside.
Blitz remaining ¼ cup of raspberries and 2 tbsp water until smooth and a purée forms. Dollop a small amount of purée into each of the Frosties.
Pour cream mixture over the top of the purée, filling each completely, then use a toothpick to swirl through the purée.
Place into the freezer and freeze for at least four hours.
