This soup has been on high rotation at WMBT HQ since we stumbled across it.
And the flexibility within this recipe means it turns out slightly different each time. It allows you to use up whatever veggies you’ve got in your fridge of pantry and makes the perfect last-minute dinner fix when you’ve run out of ideas or time.
Grab your pot, throw in the ingredients, let it simmer for about 20 minutes and you’re looking at a rick soup perfect for dipping and slurping.

- 500 ml (2 cups) free range, homemade chicken stock
- 250 ml (1 cup) tomato passata
- add vegetables of choice
- add white rice, noodles or croutons
Place all ingredients into a medium-sized pot and bring to boil.
Simmer for 15 to 20 minutes or until all vegetables are soft.
Transfer to a food processor and blend until smooth or serve as is.
Season to taste and finish with a dollop of butter or cream.
