Elephant Ears | The Savoury Puff Pastry Scrolls for your Lunch Box
We’ve all heard of pizza scrolls. Want to take the convenience up a notch?
Then you’ve got to meet these savoury puff pastry scrolls that feel right at home in your little one’s lunch box.
No need to make the dough. Simply add your toppings, bake and you’re good to go.
So grab your Placie, organise your ingredients and get making.
Our no-nasties silicone Placies are the perfect eco-friendly alternative to baking paper and love a decent oven workout. And once you’re done, add the Placie to your next dishwasher cycle so you can dig into the Elephant Ears rather than do the dishes.
At WMBT HQ, we love turning this exercise into a baking session to prepare healthy snacks for the week ahead. This recipe makes 14 small puff pastry scrolls, so depending on how many lunchboxes you’ve got to organise, up the quantities so you have enough for the next few days.
Want more variety?
Mix-n-match your ingredients and come up with new flavour combos that know your socks off. Why not opt for feta and spinach or salami and capsicum to spice things up? We give it a big thumbs up!
Makes 14
Ingredients
- 1 sheet puff pastry, thawed
- 2 tbsp organic tomato paste
- 75 g (¾ cup) cheese, grated
- 50 g (½ cup) carrot, grated
- handful fresh basil
Method
Preheat oven to 180 C. Line a baking tray with a We Might Be Tiny Placie or parchment paper and set aside.
Place pastry sheet onto another We Might Be Tiny Placie (or a lightly floured surface). Spread tomato paste evenly over the pastry.
Sprinkle over the cheese and carrot before roughly tearing and sprinkling on the basil leaves.
Working from one side of the pastry square, roll up tightly toward the centre. Repeat from the other side. Place in freezer for 10 minutes if time allows. This makes the next step easier.
Remove from freezer and cut pastry into 1 cm slices. Place on lined baking tray and bake for 12-15 minutes or until golden.
Remove to wire rack to cool slightly before serving in your favourite Stickie Bowl.
