These little bite-sized balls of deliciousness are packed with all the goodness to keep your little one satisfied (until snack time rolls around)!
Corn bites can be paired with fresh fruit or veggies to create colour and interest in your kid's lunchbox.

Bake 15 - 20 minutes
- 400 g zucchini, grated
- ½ tsp cumin, ground
- 1 tbsp olive oil
- 120 g (½ cup) corn
- 2 tbsp parmesan, grated
- 60 g mozzarella, diced
- 50 g (1 slice) wholemeal bread, toasted and ground
- 1 egg
- 1 tbsp fresh coriander, finely chopped
- 1 clove garlic, minced
- zest of half a lemon
Preheat the oven to 200 C.
Line a baking tray with parchment paper.
Heat the olive oil in a pan then lightly fry the zucchini and cumin until golden brown.
Use kitchen towel to remove excess liquid from the zucchini and allow to cool for a few minutes.
Combine zucchini with all remaining ingredients. Roll into balls and place on baking tray.
Bake for 15 to 20 minutes.
