It will be heaven! You’ll definitely earn Mum of the Year status and have all the other mums begging you to share the delish recipe (wait until they find out how quick it is to prepare). Make It A Bonding Activity…

As you no doubt already know, full-out party prep can sometimes be crazy. But why not turn it into a fun bonding experience with your kiddos? How about having them help mix up the filling ingredients (by pressing the button on the blitzer), preparing the utensils, or putting on special toppings afterwards?

Make it a fun activity! It’s virtually a fool-proof recipe, so tots of all sizes can get involved.

What’s In It?

So, what makes the Chocolate Tart super-nutritious?

First, cacao is a superfood. Some even call it the “ultimate superfood” because of its high antioxidant content. Those are called flavanols, which generally helps to improve mental and physical health. 

Cacao is also a good source of iron, protein, magnesium, calcium, zinc, copper, and selenium. Plus, it has fibres that can help your digestive system.

Other things that make the Chocolate Tart healthy for all:

  • Cashews may help in brain development, energy production, reducing heart disease risk, and blood glucose control.
  • Almonds may help reduce blood sugar, blood pressure, and cholesterol levels, and are a great source of antioxidants, vitamin E, and magnesium.
  • Agave is a more natural sweetener alternative, which may help improve overallmetabolism and control blood sugar.
  • Coconut oil can quickly provide energy.
  • Vanilla contains anatural anti-depressant called vanillin.
  • Himalayan crystal salt is known tohelp detoxify the body, maintain healthy digestion, and may help regulate hormonal balance and blood sugar.

Medjool dates have high fibre content that may help in digestion and healthy weight management.

Oh, about chocolate making people happy? It’s been shown that chocolate has tryptophan, phenylethylalanine, and theobromine, which together may help to improve mood and produce feelings of happiness, satisfaction, and relaxation.

Chocolate Tart Recipe

Makes 1 Bear Cake | Prep 30 minutes | Freeze 4 hours

Ingredients

FILLING

  • 215 g (1 ½ cups) of soaked cashews*
  • 125 ml (½ cup) and 2 tbsp water, filtered
  • 125 ml (½ cup) and 2 tbsp agave/maple syrup
  • 125 ml (½ cup) coconut oil
  • 1 tsp vanilla
  • ¼ tsp Himalayan crystal salt
  • 90 g (1 cup) raw cacao powder

CRUST

  • 160 g (1 ½ cup) almonds, roughly ground *
  • 2 tbsp coconut oil
  • splash of agave/maple syrup
  • 4 – 5 Medjool dates, soaked in hot water for 10 minutes

Method

FILLING

Finely grind the cashews in a high-speed food processor, then blend with all remaining ingredients until very smooth. Pour mixture into Bear Cake Mould. Cover or seal and refrigerate for 3 hours or until very firm, ensuring the mould is on a flat surface.

CRUST

Combine nuts, coconut oil, agave, and dates by hand or using a high-speed food processor until thoroughly combined. Press crust mixture onto chilled filling layer then refrigerate or freeze for a minimum of one hour.

Notes

*Soak almonds and cashews in 500 millilitres of filtered water with one tablespoon of apple cider vinegar for a minimum of two hours/overnight then rinse thoroughly with fresh water. This will increase the digestibility of the nuts and remove any moulds and mycotoxins. To increase the crunch of the almond base, roast the already soaked almonds for 30 mins at 160 C.
