Grandma's Secret Chicken Curry Recipe

Makes 1 large pot (approximately 6 portions) Ā  | Ā  Prep time 30 minutes

Ingredients

  • 1 onion, finely chopped
  • 500 g (1 packet) chicken breasts, cut into small pieces
  • 2 cloves garlic, minced
  • 1 tbsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1 tsp mild curry powder
  • 1 tsp fennel seeds
  • salt and pepper
  • 250 ml (1 cup) veggie stock
  • 125 ml (Ā½ cup) tomato puree
  • 1 tbsp veggie stock paste
  • 2 carrots, diced
  • 10 mushrooms, chopped
  • 2 tbsp semolina

Method

  1. In a large skillet, heat 1 tbsp coconut oil over a medium heat. Add onions and sautƩ for five minutes until caramelised. Add chicken and stir until seared.
  2. Add garlic and spices, and fry for a minute before adding stock, tomato puree, and stock paste. Bring to a boil.
  3. Add vegetables and semolina and let simmer for 20 minutes.Ā
