Ingredients
- 2 small beetroot
- 1 sweet potato
- 3 stalks asparagus
- 1 cob corn
- salt and pepper to taste
- 2 tsp dried herbs
- olive oil
Method
Preheat oven to 170 C and line a baking tray with parchment paper.
Slice the veggies into discs about 0.5-1 cm thick. Cut out desired shapes with a cookie cutter.
Place the shapes in a bowl and drizzle with olive oil, dried herbs, and salt and pepper. Mix so veggies are coated.
Place onto baking tray and bake for 25 minutes or until the veggies are soft and golden.
